Recipe 33: Lemon-Yogurt Cupcakes



I used this recipe. As I mainly made these because I had some plain yogurt I needed to use, I just went with what I had on hand and thus use skipped the lemon zest (added a little extra juice) and used applesauce instead of an egg. Also, didn't make any frosting. They still ended up very tasty. Only thing I didn't like is it makes more than 12, so couldn't bake them in one go since I only have one muffin tin. Seems odd to have a recipe for 14, although I actually ended up with 18 (if there had really only been batter for two more I probably would've just thrown it out instead of baking it).

Recipe 32: Toasted Rosemary Nuts


I used this recipe. I used mostly pecan halves along with some walnut pieces I had leftover from other recipes. Overall easy and tasty, but I think if I make again I'd skip the sugar (or maybe use half) and reduce the salt by at least half.

Recipe 30: Strawberry and Spinach Salad



I used the leftover spinach and some strawberries and walnuts from the Spinach and Strawberry Roll-ups to make salads.

Recipe 29: Spinach and Strawberry Roll Ups


I used this recipe. I used the smaller fajita size tortillas as I already had a bunch of them. I made the filling as only a half recipe and ended up with enough for 7 tortillas. Overall easy and tasty, especially when I skipped the cutting into smaller pieces and just ate them as a full size tortilla roll up.

Recipe 28: Double Decker Party Smores


I used this recipe. I didn't want to make a whole pan, so I tried just making six. It worked fine for the first layer, but totally failed with the second layer and I only baked for about 4 minutes before checking. Not sure if it had to do with using just dark chocolate, which seemed to melt faster than the milk chocolate peanut butter cups I had, or if more that you really need the pan full to keep them together. I was able to somewhat fix them and put them back together, but they were a liquid chocolate mess. I put them in the fridge to be able to get the chocolate more solid, which allowed them to at least be eaten, but then no gooey marshmallow.

Recipe 27: Apple Pie Crescent Bites



I used this recipe. Easy, but way too much extra brown sugar leftover at end, especially considering I only mixed about two tablespoons with the three teaspoons of cinnamon.

Recipe 26: Strawberry and Avocado Wonton Cups


I followed this recipe skipping the chicken. I also used yellow mustard because that's what I had (probably would've been better with the called for whole grain mustard) and agave nectar in place of honey as I don't like honey and again that's what I had. Overall tasty, but a lot of work. Also, the wontons came out way too crispy the first time. Not sure if it was because I cooked only 4 minutes or only lightly sprayed (instead of the generously sprayed as in recipe), but the second batch came out much better.
