Recipe 65: Pull Apart Crescent Meatball Sliders


I used this recipe. I used Gardien meatless meatballs. Not sure if it was that they were big (only used 12, which was the whole package anyways) or that I used too much sauce, but couldn't fold the dough over them really. Still very tasty, though.

Recipe 59: Mini Corn Dog Muffins


I used this recipe. I used 5 Morning Star veggie dogs broken into 4 to 5 pieces. Since I could only find a small box of Jiffy cornbread mix at my grocery store, I did the recipe as a little over half. I still ended up with 24 mini corn dog muffins, though.

Recipe 26: Strawberry and Avocado Wonton Cups


I followed this recipe skipping the chicken. I also used yellow mustard because that's what I had (probably would've been better with the called for whole grain mustard) and agave nectar in place of honey as I don't like honey and again that's what I had. Overall tasty, but a lot of work. Also, the wontons came out way too crispy the first time. Not sure if it was because I cooked only 4 minutes or only lightly sprayed (instead of the generously sprayed as in recipe), but the second batch came out much better.

I made Broccoli Veggie Tots Nachos based of the recommendation on the back of the Green Giant Broccoli Veggie Tots. Instead of using bacon bits, though, I used Quorn Meatless Pieces.

Recipe 5: Ranch Cucumber Bites


I used this recipe. Overall easy and tasty. Definitely should've gone with piping it on, though, as it slides right off when trying to spread on the cucumber. Also, cherry tomatoes are not fun to try to slice in half...

Recipe 39: Crab Cream Puffs


Finally I am into the recipes I made in May. For the Crab Cream Puffs I used the eclairs recipe I learned from the Baking Boot Camp to make the puffs. I found the Crab filling recipe online here. They turned out pretty tasty, although piping the crab filling is kind of hard because it is thicker than the normal cream puff filling. I will definitely be making this again and in fact probably this week.

Recipe 8: Orange Bruschetta



I bought the game My Healthy Cooking Coach a few weeks ago. Last Thursday I used it to make a recipe for the first time. The first recipe I made was Orange Bruschetta. I kind of knew it went on bread, but it never lists or mentions serving it on bread, so I forgot to get some. I ended up putting it on toasted wheat bread. It was not too bad, but it had way too much onions in it and I actually halved what was called for (2 scallops and I only used 1). The orange and tomato flavor was good. I do not know if I will make it again, but if I do I will definitely almost entirely leave out the onion and remember to have decent bread on hand.
